When it comes to cookies, deliciousness usually arrives in the form of ingredients like butter, cream and milk. So, what happens when you can’t eat any of these foods? In our case, We started playing with coconut. These balls of nutritious sweetness are the result!
Makes 12 balls
Place 1 cup of desiccated coconut in a food processor along with the coconut oil. Blend on a high speed, scraping down the sides every now and then, until you have a paste-like consistency. Add the agave, coconut milk, vanilla, cinnamon, and salt and blend until thoroughly mixed. Add ½ a cup of desiccated coconut and pulse until just combined.
Shape the mixture into 12 (1-inch) balls and roll them to coat with the remaining desiccated coconut. Refrigerate for at least an hour to set. They taste best at room temperature, so take them out of the fridge for a bit before eating. If you are far more disciplined than US, they will keep in the fridge for up to five days!
