Carrot and Banana Bread

  • 2 tablespoons chia seeds
  • 1 carrot grated
  • 4 ripe bananas
  • 1 vanilla pod – split and scrape out the seeds
  • 300g brown rice flour
  • 4 tablespoons maple syrup
  • 1 tablespoon ground cinnamon
  • Coconut oil for the tin


Preheat the oven to 200 ̊C/400 ̊F. Soak the chia seeds in 6 tablespoons of water for about 10 minutes until the water is absorbed.

Step 1

In a large bowl mash three of the bananas and add the carrot and vanilla seeds. Mix in the flour, maple syrup and cinnamon. Stir in the chia seeds and leave everything for 10 minutes.

Step 2

Grease a loaf tin with coconut oil. Scoop the batter into the tin. Cut the last banana in half and place it on top, gently pressing it. Bake for 40 -50 minutes, then allow to cool. Store in an airtight container for up to 5 days.
