COCONUT SNOWBALLS

ingredients:

  • 1 3/4 cups unsweetened desiccated coconut
  • 2 teaspoons melted coconut oil
  • 3 tablespoons agave syrup
  • 2 tablespoons unsweetened coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of natural sea salt

method:

Place 1 cup of desiccated coconut in a food processor along with the coconut oil. Blend on a high speed, scraping down the sides every now and then, until you have a paste-like consistency. Add the agave, coconut milk, vanilla, cinnamon, and salt and blend until thoroughly mixed. Add ½ a cup of desiccated coconut and pulse until just combined.

Step 1

Shape the mixture into 12 (1-inch) balls and roll them to coat with the remaining desiccated coconut.

Step 2

Refrigerate for at least an hour to set. They taste best at room temperature, so take them out of the fridge for a bit before eating. If you are far more disciplined than US, they will keep in the fridge for up to five days!
