Rise and Smile Choco Mousse

  • 50ml coconut milk
  • 75ml coconut cream for whipping
  • 125g of dairy-free chocolate
  • Dried gluten free oats
  • Dried berries
  • Handful of coconut flakes


Break the chocolate into small pieces and put it into a heatproof bowl. To melt the chocolate without burning it you need to create a “Bain Marie”. Simply heat a saucepan of water until it reaches a gentle simmer.

Step 1

Place the bowl of chocolate over the saucepan of water and let the chocolate melt. Meanwhile, bring your milk to the boil in a separate saucepan. As soon as it boils remove from the heat, pour in the melted chocolate and stir well until the mixture is fully combined. Spoon or pipe the mousse mixture into individual dishes. Whisk the cream until it is very thick and then spoon it on top of each dish. Finally, decorate with dried berries, oats and coconut flakes.

Step 2

Chill in the fridge for 1 hour before serving.
